1 lb. spinach, cleaned 
                      1 qt. dried cranberries 
                      caramelized walnuts 
                      crumbled goat cheese (or fresh feta cheese) 
                      salt and pepper 
                      Dressing 
                        1/3 cup olive oil 
                        1 tbs. balsamic vinegar 
                        1 tsp. honey 
                        (or substitute our own Maple Balsamic Vinaigrette)

                    Whisk together honey, vinegar, and a pinch of salt and pepper in a bowl. While whisking, slowly pour in olive oil. In another bowl, toss spinach and cranberries with enough dressing to just coat. Divide onto plates. Sprinkle cheese and walnuts on top.
